Ole Saint at Boomtown Casino in Biloxi was a fast-tracked restaurant renovation developed for repeat client Ballard Brands. Greenleaf provided architectural and interior design services to adapt the existing space into an urban gastro pub while working within an unusually compressed design and construction schedule.

Construction was already underway while portions of the design were still being developed, requiring close coordination between Greenleaf, the client, consultants, contractor, and active trades on site. While paying close attention to cost, schedule, and the availability of materials, lighting, and furnishings, the team also had to stay true to the new identity developed for the restaurant concept. Decisions had to be made quickly and collaboratively so construction could continue without compromising the overall design direction.



The finished interior uses exposed brick, industrial lighting, furnishings, and layered materials to establish the character of the Ole Saint concept while responding to the operational needs of a restaurant within an active casino environment.

The project was part of Greenleaf's broader relationship with Ballard Brands, which also included additional restaurant work for Ole Saint and WOW American Eats. That repeat collaboration gave the team a strong understanding of the client's operational priorities while allowing each restaurant concept to maintain its own identity.
